58 FRIENDLY CIRCLE—1949 Jersey Farms Whipped Cream Pie 2 tbsp. flour, 3 tbsp. sugar, 1 egg (well beaten), ™% cup milk, 1 tsp. vanilla, 1 cup whipping cream. Baked Pie Shell. Method: Mix and sift flour and sugar. Add beaten egg and milk. Blend thoroughly and cook over hot water to form a smooth custard. Remove from heat. Cool. Add vanilla and whipped cream. Pour into baked pie shell and garnish with fruit. —Ida Manfield. Chocolate Sundae Pie 1% c. milk, % tsp. nutmeg, 3 eggs, %c. sugar, %& tsp. salt, 1 tbsp. gelatine, 3 tbsp. cold water, % tsp. vanilla, 9-inch baked pie shell, 1 c. whipping cream, 4 tbsp. grated chocolate. Method: Scald milk with nutmeg. Beat egg yolks until light, adding sugar and salt. Combine mixture gradually and cook in double boiler until thickened, stirring constantly. Remove from heat and add gelatine softened in cold water. Add vanilla and cool. When mixture begins to thicken beat with ego beater and fold in stiffly beaten whites. Pour into baked shell and place in a cool place until firm. Spread with whipped cream and sprinkle with coarsely grated chocolate. © | —Ida Manfield. Raisin Pie 2 c. seedless raisins, 1 c. boiling water, 34 c. brown sugar, 2 tbsps. cornstarch in cold water, % tsp. salt, 2 thsps. vinegar, 2 tbsps. butter, 1 tsp. vanilla. Simmer cleaned raisins and boiled water for 5 min. Mix brown sugar and cornstarch smoothly, blend with sufficient cold water to make thick mix- ture pour, then pour into boiling raisins. Cook thickened, add salt, butter, vinegar and vanilla. Pour onto paste. —Mildred Crawford. Shoo-Fly Pie 1% c. sifted flour, 1 c. brown sugar, % tsp. salt, %4 c. shortening, % tsp. soda, % c. hot water, %c. molasses. Line 2 nine inch pie plates with pastry. Make crumbs by combin- ing flour, sugar, salt and shortening. Dissolve soda in hot water and combine with molasses. Add 3% of the crumbs, pour into pastry lined pans and top with remaining crumbs. Bake in a 450 degree oven for ten minutes, then reduce to 350 and bake until firm. —Shirley Brown. Ice Cream Pie 1 cereal flake pie shell. 1 qt. ice cream and flavor, /% ounce chocolate. Fill pie shell with ice cream, grate choc. over top and serve at once. Make 1 9” pie. Omit chocolate and use sweetened fruit or berries or an ice cream sauce.
