SWEET GREEN TOMATO PICKLE 8 cups thinly sliced green 1% cups mild vinegar tomatoes, 3 lbs. 1% cups white sugar 2 cups thinly sliced onion 2 tbsp. mixed pickling spice % cup salt % tsp. dry mustard 1/8 tsp. cayenne pepper Make alternate layers of tomatoes, onion and salt in a large bowl. Cover, let stand overnight. Then drain well, discarding liquid. Heat remaining ingredients (tie pickling spices in cheese cloth bag) to boiling in kettle. Add drained vegetables. Cook slowly, stir- ring often for 45 minutes, until tomatoes get clear. Remove spice bag. Pack at once in hot sealers. - Mrs. Erik A.
