CHICKEN OR TURKEY CASSEROLE Empty into a large bowl 1 can Cream of Chicken soup Mix thoroughly into this 1 can of water and stir in 1/4 teaspoon salt. Add to this mixture the remaining ingredients: 2 cup rice, uncooked 1/2 cup diced celery i medium onion, sliced 1 1/2 cups cooked chicken or turkey, diced 3 medium carrots, quartered 1 green pepper, diced Turn into a greased baking dish. BAKED LIVER WITH VEGETABLES 1 1/2 lb. liver © carrots (cooked) 1 turnip (cooked) 3 onions 1 cup cooked peas 1 tbsp. fat 2 tbsp. flour 1 1/2 cups canned tomatoes Seasoning » Cook liver in s2lted boiling water for 5 or 10 minutes. Cut liver in casserole dish. Add vegetables. Brown flour and fat together. add- ing 1/2 cup water (use the water in which the carrots were cooked). In- to this gravy add the onions; simmer for 5 minutes. Pour gravy into the casserole. Add canned tomatoes. Rake in 350° oven for 30 - 40 minutes. - Mrs. E. D. Henschke. 29 CASSEROLES CHILI CON CARNE 2 tbsp. shortening 1 lb. ground beef 2 onions (minced) 1/2 green pepper 1 clove garlic (minced) 1 20 oz. can tomatoes 1 20 oz. can kidney beans and liquid 1 tbsp. salt dash cayenne pepper 1 tbsp. chili powder Use pan with a cover. Add shorten- ine. Add rround beef, breaking it apart and searing until browned. Add onions, garlic and diced zreen pepper. Brown lightly. Stir in tomatoes, kidney beans, salt, cayenne venper and chili nowder. Place cover on nan. Cook for about 15 - 20 minutes. Serve over spaghetti or macaroni. - Lavina Neil.
