ADVENTURES IN COOKING 79 BARBECUED CHICKEN 1 small roasting chicken 14 cup flour 2 tsp salt Y% cup fat 1 onion (sliced) Y% cup chopped celery 4 cup chopped green pepper 1 cup catsup 1 cup water 1 tbsp worcestershire sauce 2 tbsp brown sugar lg tsp pepper A 3 or 4-lb. roasting chicken cut up as for frying. Dip pieces in flour which has been seasoned with salt. Fry in hot fat until golden brown on all sides. Remove fat, except 2 tbsp. from frying pan Cook onion in fat until transparent, add remaining ingredients. Bring to a boil and pour over chicken. Cover baking dish. Bake in moderate oven (350 deg. F.) about 134 hours, or until tender. FRIED CHICKEN (Southern Style) 1 frying chicken cut into serving pieces 2 tsp sugar 1 egg 3 tbsp melted fat 34 cup milk 4 tsp salt 1 cup flour fat for frying Steam chicken about 15 minutes. Beat egg with milk and melted fat. Add sifted dry ingredients. Beat till smooth; salt chicken, dip in batter. Frying in deep fat. Heat to 375 deg. F. Fry until golden brown, 5-10 minutes. Serve with sauted pineapple rings and currant jelly. CHICKEN (Southern Style) Prepare crumbs by cutting white bread thin, drying in the oven, and then browning to a golden color. Crush this up and add same quantity of white flour. Add salt and pepper. Take chicken, which has been cut into small pieces, remove skin. Beat two eggs, dip the chicken in the egg and then in the crumbs. Pan fry in pure lard, or good shortening, on both sides. Put in thick pan and cover tightly. Cook slowly until tender. SMOTHERED CHICKEN 1 young chicken, 3-4 lbs. Cut up. 1g cup flour 114, tsp salt Y% cup fat (for frying) 14 tsp pepper 2 cups cream or rich milk 14 tsp ginger 14 |b sliced mushrooms 14 tsp poultry seasoning Coat chicken with mixture of seasonings and flour. Cook chicken in hot fat until golden brown. Place pieces in casserole, sprinkle remaining flour mixture over top. Heat cream to boiling, add sliced mushrooms and pour over chicken. Cover and bake slowly in oven at 325 deg. F. until fork tender for 1 to 1% hrs, 5 to 6 servings.
