STEAMED CRANBERRY PUDDING. 144 cups cranberries (low bush). °%4 cup boiling water. 3%, cup sugar. 1 1/3 cups flour, 2 teaspoons baking powder. 4 teaspoon soda. 1% teaspoon salt. Y% cup light molasses. 1% cup boiling water. Cook cranberries, boiling water and sugar together until thick. Then cool. Sift flour once and measure. Sift flour, baking powder, soda and salt together. Add 1 cup of cooled cran- berry sauce to the dry ingredients. Add the % cup boiling water to the mo- lasses and combine with the flour, cranberry mixture. Blend thoroughly. Pour into greased pudding mould, cover and steam for 2 hours. Serve with butterscotch sauce (8 servings). BUTTERSCOTCH SAUCE. 6 tablespoons melted butter. 1/3 cup granulated sugar. 1/3 cup brown sugar. Pinch of salt. 34 cup cream, Combine ingredients and boil 5 minutes. Serve with steamed cran- berry pudding. —Mrs. I. Bergsteinsson, Berkeley, Calif. LEMON PUDDING. 2 cups water. 1 cup sugar. 2 lemons. Pinch of salt. Thicken with corn starch to a soft consistency. Remove from fire and add 3 egg yolks. Then beat the 3 egg whites stiff and fold in. Serve with cream. —Mrs. D. W. Matheson. LEMON PUDDING. cup white sugar. tablespoons butter. lemon. eggs. tablespoons flour. % cups milk. Cream together sugar and butter, stir in grated rind and juice of lemon; add beaten egg yolks and flour. Add m= DONS Wo milk and fold in beaten egg whites. Pour into buttered baking dish and set in pan of water and bake one hour in ~ moderate oven. Top should be nice and brown. Needs no sauce. Serve cold. —Mrs. T. Scambler. ORANGE PUDDING. Sauce— °%4 cup boiling water. 1 tablespoon butter. %4 cup sugar. Juice 1 large orange. Little of grated rind. - Mix in order given and boil for 4° minutes. Batter — 2/3 cup sugar. : 1 tablespoon butter. i. % cup sweet milk. 1 teaspoon baking powder and enough flour to make a medium. stiff batter. Drop batter by spoonfuls into hot sauce, and bake in moderate oven for half an hour. —Mrs. G. H. Davies. ORANGE PUDDING. 1 cup orange juice. 2 tablespoons lemon juice. 1 cup sugar. 3 cups hot water. 1 package minute tapioca. Few grains salt. Add tapioca to boiling water stirring slowly and constantly. As soon as it begins to thicken, add sugar, salt and lemon and orange juice. Boil 3 min- utes. —Mrs. B. Baldwin. DATE CRUMBLE DESSERT. 1 1/3 cups minute oats. 1% cups flour. 1 cup brown sugar, 34 cup butter. 1 teaspoon soda. 1 teaspoon baking powder. Mix with the hands, and spread one- half in buttered cake pan. Cover with cooled filling and then remaining crumb mixture. Filling— 2 cups brown sugar. % cup white sugar. 1 Ib. dates. 1 cup nuts.
