NEW ENGLAND DINNER 2 Ibs. Salt Codf‘sh, 2 cups small Onions freshened 2 cups White Sauce % lb. Salt Pork (See Sauces) 12 raw Beets 2 hard boiled Eggs, 2 lbs. small Potatoes chopped Bring fish to a boil. Cut the pork in narrow thin -slices and crisp in frying pan. Cook vegetables separate- ly. Place fish on platter and cover with sauce. Sprinkle eggs over top. Group the vegetables and pork around the edge of the platter to make it look attractive. CODFISH FLAKES, CHUNG KING 2 cups cooked Codfish 4 tablespoons Bread Crumbs 14%. cups cooked Rice 1 tablespoon Butter 14% cups White Sauce Salt and Pepper (See Sauces) Arrange alternate layers of fish, rice and white sauce, leaving the sauce on top. Sprinkle crumbs and ‘butter over the top and bake 20 minutes in a hot oven, 400 to 450 degrees. Serve 6.
