Pot Roast with Prunes 4 lb. pot roast 1 t. salt flour for dredging 1/8 t. pepper 3 T. fat for browning 1% C water 3 medium onions, sliced % C. vinegar 4% 1b. uncooked prunes 4 whole cloves Soak prunes overnight. Dredge meat in flour and brown on all sides in fat, Remove meat to heavy baking dish. Cook onion -in hot fat until golden brown and add to meat together with the fat. Sprinkle with salt and pepper and arrange prunes around meat. Add water, vinegar and cloves. Cover tightly and bake in 325°F. oven until tender, 2tout 3% hours 8. West Indies Round or Chu: Steak 4 lbs. round steak pepper clove garlic, minced 2 T. parsley, chopped 5 t. thyme 3 onions, sliced % t. mace - 2 tomatoes, chopped % t. nutmeg } C. vinegar 2 t. salt Marinate the steak in a combination of all the other ingredients for 2 hours. Remove the steak from the marinade, wipe it dry, and brown it in butter. Add % C. boiling water to the marinade and pour it over the steak. Cover and bake at 350 F for about 3 hours.
