CHOW MEIN 1 lb. deep fried noodles 11/2 pkg. bean sprouts (sub: cabbage cut fine) 2 medium onions, cut fine 1/2 Ib. pork, diced 2 tbsp. soybean sauce 1 cup celery, cut fine salt sesamen seeds Cut pork in little cubes. Put in large skillet until brown. Add celery and onions for about a minute, then add bean sprouts (or cabbage). Cook until tender (app roximately 10 minutes). Add noodles, salt and sauce. Cook for about 5 minutes, then serve piping hot. Sprinkle with sesamen seeds or strips of chicken meat if desired. - Alice Soon. CHEESE CAKE (Jewish) 1 lb. cream cheese BS cups sugar 6 eggs, beaten separately 3 tsp. vanilla 11/2 cups sour cream 11/2 tbsp. melted butter 3 tbsp. cornstarch Beat egg yolks with sugar until light yellow; add ‘vanilla, cream, melted butter; add cheese and stir until smooth. Fold in stiffly beaten egg whites. Use electric mixer. Crust: 14 grenam wafers crushed fine and mixed with 1/4 cup butter, 1/4 cup sugar. Place crumbs in buttered spring form. Pour filling on crust. Sprinkle top with cinnamon. Bake in 275° oven for 1 hour. At the end of the baking period, turn off oven, open door and let cake stand in oven another hour. 11% Yield: CHINESE ALMOND COOKIES (Christmas Cookies) 1/2 cup butter or margene 2/3 cup white sugar 2/3 cup berry sugar, packed 1/2 tsp.almond extract 1 egg, separated 2 tbsp. milk 1 tbsp. vinegar 2 cups sifted bread flour 1/4 tsp. baking soda 1/4 tsp. salt 1/2 cup chopped toasted almonds 1/3 cup. blanched almonds, split in half Blend butter and sugars, beat in flavoring, egg yolk, milk and vinegar. Blend in mixed and sifted dry ingredients and chopped nuts. Shape dough (chill if necessary) into 1" balls. Place on baking sheet, flatten with the bottom of a floured water glass. Brush cookies with slightly beaten egg white, press a half almond in centre of each. Bake 10-12 minutes at 375°. l2 dozen - Mrs. R. Scheldrup. PEPPER COCKA (Norwegian Cookies) 1 cup syrup 1 cup sugar 1 cup shortening - half butter 3/4 cup water 3 cups flour a tsp. pepper 1 tsp. cloves salt Take sugar, syrup, water and butter in a pot and let come to boil. Cool. Add 1/2 tsp. soda, flour and 1 tsp. baking powder. Leave overnight in fridge. Roll and cut as cockies. - Mrs. F. J. Amstutz.
