ISSUED BY EATON’S FARM NEWS SERVICE WINNIPEG, CANADA The proper type of hog for the Canadian farmer to raise is the Bacon Hog. For a time many farmers contended that it cost more to produce the bacon hog than the thick, fat type of hog. But results obtained at the Dominion experimental farms and stations, and the experience of many successful breeders, show that, if anything, the reverse is true. Canadian farmers have an advantage in producing the bacon hog in that the by- products of our great milling and dairy industries contain the necessary elements of a good growing ration for hogs, and the large acreage sown annually to small grains pro- vides ample feed for finishing purposes. TYPE OF HOG DESIRED To yield the best “Wiltshire side,” a hog should be of the type shown in the illustra- tion and conform to the following requirements: Jowl and shoulder light and smooth; back from neck to tail evenly fleshed; side long, medium depth, dropping straight from the back; ham full; good general finish, no excess fat; weight 170 to 220 lbs. (180 to 230 lbs. at the farm). ‘Wiltshire sides” weighing from 50 to 65 lbs. are preferred for export. The trade gradings of ‘Wiltshire sides” are: (a) Leanest; (b) lean, both desirable and in steady demand; (c) prime (or stout), only limited demand and varying market, The grades are determined by the following points: 1. General balance of side. 2. Length from shoulder to ham. 3. Balance and neatness of ham, shoulder, neck and jowl. 4, Quality of lean and fat. 5. Evenness of back fat. 6. Strength of loin and thickness and streak of belly. A bacon type hog of about six months, properly fed, will give the desired points.
