LEMON TAFFY Constance N. Troughton, Sintaluta. 4 cups white sugar. 4 tbsp. vinegar. 2 cups boiling water. 1 tbsp. butter. Stir until sugar is denatured. Boil with lid on till brittle. Pour out on pan. When getting hard rub butter on hands and puil candy until white and porous. Leave strands on wax paper to harden and snap off, or roll in small pieces to harden. MAPLE WALNUT CREAM Lillian Christensen. 4 cups light brown sugar. 1 tbsp. corn syrup. 1 cup rich cow’s milk or slightly Pinch of salt. diluted canned milk. - 2 tbsp. butter (I use %-cup ordinary milk or 1'4-tsp. vanilla. %-cup canned milk.) 1 cup broken walnuts or pecans. Combine sugar, milk, syrup, add salt, and stir over low heat until sugar dissolves. Then increase heat and cook until soft-ball stage; add butter and bring again to boil. Remove. Cool slightly and add vanilla. Cool until sides of pan can be touched with hand. Beat until mixture is creamy, either by hand or electric mixer. Add walnuts and turn into pan which has been buttered. PEANUT BRITTLE Mrs. S. Cook, Ellisboro. 3 cups white sugar. l,-tsp. cream of tartar. 1 tbsp. butter. 14-cup water. Boil all together until hard crack, remove from fire and add quickly 14-tsp. soda and 1 cup peanuts. TEN MINUTE FUDGE Mrs. T. D. B. Ragg. 2 cups brown sugar. Milk. 114-tbsp. cocoa. 1 tbsp. cornstarch. 3 tbsp. butter. Combine brown sugar, cocoa and butter; add enough milk to mix. Let come to boil. Mix 1 tbsp. cornstarch with a little cold milk, add to hot mixture. Put on stove and boil hard for three minutes. Beat hard; add vanilla and pour in greased 8’’x8” pan. CHRISTMAS CHOCOLATES M. Balfour, Sintaluta. 8-oz. unsweetened Bakers’ 3 Ibs. icing sugar. chocolate, plus 3 bars plain milk 1 can condensed milk, less 2 tbsp. chocolate. 2 tbsp. syrup. l,-lb. butter. 1,-stick or less of parowax. Melt chocolate and wax in double boiler. In bowl cream butter, add sugar, milk and syrup to make a smooth paste. Add nuts, cocoanut, flavoring or anything you wish.
