Mix fruit in flour and add to mixture. Steam 2 hours and bake one hour in slow oven. A square roaster with loose bottom raised makes a very satisfactory steamer. Christmas Cake 1 Ib. butter 4 t. rosewater 1 Ib. almonds 1 lb. sugar 2 Ib. seeded raisins 1 t. nutmeg 1 |b. flour 1 lb. seedless raisins 1 t. cinnamon 10 eggs 2 lb. currants 1 t. cloves 1 ec. fruit juice 1 Ib. dates 2 t. soda 1 Ib. mixed peel Pour boiling water over raisins, currants, drain and dry thor- oughly. Blanch and peel almonds, stone and cut up dates, and peel if not prepared. Beat eggs, add butter and sugar and cream well. Add fruit juice, and soda (dissolve in a little of the juice). Add fruits, nuts, peel, spices, etc. Mix well and add flour to stiffen. _Line pans with brown paper first, then wax paper. Place in a cool oven, gradually increase heat to 350 or 400 F. Bake 3 to 4 hours. Beat eggs until light and add to butter and sugar. Add molasses and fruit juice together. Add flour, spices and fruit.
