THE MANITOBA HEALTH COOK BOOK Ol NT OT: Orange Cake 1c. b. sugar 1, c. butter 1 large orange (rind) 1 c. sour milk 1 c. chopped dates , ¢. chopped nuts ’, ¢. chopped raisins 2 c. flour 1 t. soda 1 t. b. powder 1 egg Cream butter and sugar. Add grated orange rind, milk, fruit and nuts. Sift Hour, soda and baking powder. Add to first mixture. Lastly add well beaten egg. Bake in moderate oven. While cake is baking, melt % cup b. sugar and juice of orange on back of stove. Four over cake five minutes after it is out of oven. CHOCOLATE CAKES Honey Chocolate Cake '‘, ec. sugar Y, e. shortening 34 ¢. honey 1 egg, separated 2 sq. chocolate, melted 2%, c. cake flour Y, t. salt 1 t. soda 1 t. b-p. 4 c. water , ¢. sour milk 1 t. vanilla Cream sugar, shortening and honey about 2 min. Add egg yolk, chocolate and beat thoroughly. Add sifted dry ingredients alternately with liquids. Fold in stiffly beaten egg white. Pour in greased tin and bake in moderate oven. Chocolate Cake Y, c. butter Salt 2 eggs 1 ¢. sour milk 1 c. sugar 1 t. soda 1 t. b-powder 4 T. cocoa Vanilla 2 c. flour Cream butter and sugar, add beaten eggs, mix cocoa to a paste in hot water and add to first mixture. Dissolve soda in sour milk and add to mixture. Sift flour, measure and sift again with b-pow- der and salt. Combine all ingredients, mix well, turn into greased pans and bake in moderate oven. & Fudge Cake ° 1 ec. flour 14% ¢. w-sugar 3%, ¢c. boiling water 14 ¢«. milk Y ec. butter 1 t. vanilla 2 oz. chocolate (grtd) 1'4 t. cream of tartar 1 t. soda (or 2 T. cocoa) 2 eggs Pinch of salt Cream butter and sugar and add well beaten eggs. Dissolve soda in a little boiling water. Add milk, water, soda to cake. Add other ingredients and mix well. Bake in 2 layers. When cool, fill layers with date filling and ice with thick chocolate icing. Nuts mav be used in cake or filling. 109
