Point Brisket ] pkg. cinnamon sticks 2 tbsp. saltpetre (large ) 1 pkg. pickling spice ¥%, cup pickling salt (non-iodized ) pepper 1 head garlic Use cold water ( boiled and cooled), enough to cover meat well. Let it stand nine days. Keep cool. Turn meat once, keep it well soaked. Boil in same brine slowly four three hours. Sprinkle paprika on the fat side only. In the winter Lil uses her frig. to let it stand the nine days be- cause the basement is too warm. Lil Betsch SMOTHERED SAUSAGES Pan broil sausages until well browned. Place in casserole and cover with thick slices of apple. Sprinkle lightly with brown sugar and cover. Bake at 375 degrees until apples are tender, about 25 to 30 minutes.
