144 THE BLUE BIRD CooK BOOK SHRIMP SALAD 1 can shrimps (dry pack) 1 cup celery diced fine 1 cup shelled peanuts broken 2 cups raw tomatoes diced fine in small bits Mix and cover with a dressing made as follows: Melt ’% Ib. butter, beat up 1 raw egg, add pinch of salt, 1 teaspoon prepared mustard, %4 teaspoon paprika and juice of Y2 lemon, with an egg beater; beat in the melted butter. When perfectly cool, add 1 teacup of heavy sour cream and beat up again with an egg beater. (Whipped sweet cream may be used). (DEM.) TOMATO JELLY SALAD 2 teaspoons salt 2 tablespoons granulated gelatine 3 peppercorns Y% bay leaf 1 slice onion 1 teaspoon sugar Celery leaves 3 cloves Ya cup cold water 1 tin tomatoes Boil all together and put shell of egg in to clear while boiling. Strain and put in jelly moulds. Serve on lettuce leaf with mayonnaise. (DEM.) SALAD DRESSING 1 tablespoon flour 1% cups milk 2 tablespoons sugar Pinch cayenne pepper Y2 teaspoon mustard Pinch black pepper 1 or 2 eggs Pinch curry powder 1 teaspoon salt Juice 1 lemon Cook over hot water. Beat cream until stiff, add salad dressing until it seems strong enough in flavor. Excellent with fruit salad. SHAMROCK SALAD GARNISH Take out inside of green peppers (use perfect ones if possible). Fill with cream cheese in which you add salt and a little cream. Put in refrigerator overnight. Slice crosswise with a sharp knife. 5 CUP SALAD 1 cup canned Mandarin oranges 1 cup chunk pineapple cut or fresh oranges rather fine 1 cup very fine cocoanut 1 cup commercial sour cream 1 cup tiny marshmallows Mix well and serve on crisp lettuce. (| sometimes add a few maraschino cherries for color). JELLIED SALAD 1 pkg. lemon jello Y2 teaspoon salt 1 cup boiling water 1 cup canned pineapple tidbits 1 cup canned pineapple juice Y2 cup grated raw carrot 1 tablespoon lemon juice 1/3 cup chopped pecan nuts Dissolve jello in hot water, add pineapple juice, lemon juice and salt. When slightly thickened add pineapple, carrots and nuts. Serve on lettuce topped with salad dressing.
