COFFEE CAKE Mrs. J. Jeeves 2 Tbsp. melted butter 3/4 c. brown sugar 1 tsp. cinnamon Mix together; this is the topping - put aside until cake is mixed. 13/4 c. flour 1/3 c. shortening 3 tsp. baking powder 1 egg 1/2 tsp. salt 1c. milk 2/3 c. sugar 1/2 tsp. vanilla Mix first 4 ingredients together. Cut in shortening with pastry blender or two knives. When thoroughly blended add egg, milk, vanilla, mixing until just moistened. Pour into 8x8-inch pan, well greased. Sprinkle on topping. Bake at 375 degrees for 35 minutes. Quick and easy. DATE LOAF Eva Shasko 1c. dates ) 1/2 c. butter or margarine 1c. hot water ) Mix or oil 1ltsp. soda_i+) 1/2 c. walnuts 11/2 c. graham or stone 1c. brown sugar ground flour 2 eges 1/2 c. white flour 1 tsp. baking powder Soften dates well in hot water. Add soda and stir. Beat eggs, then beat in brown sugar. Melt butter and add. Fold in flour and baking powder. Let rise 1/2 hour and bake 3/4 hour or until done in moderate oven. Keeps well and is very good sliced and buttered. BASIC SCONE RECIPE Mrs. Wadsworth (With variations) Level tsp. bicarbonate of soda 1c. flour Level tsp. cream of tartar 1/2 Tbsp. margarine 1/2 level tsp. salt 1/4 pt. milk or milk and water (more may be required) Sieve the flour, bicarbonate of soda, cream of tartar and salt into a basin. Rub the fat into the flour. Mix to a soft dough with the milk or milk and water. Roll out until 1/4-inch thick; cut into rounds or triangles.
