aD al APRICOT BRAN MUFFINS 2/3 c. finely-cut dried apricots 1 egg 2 tbsp. sugar $c. soft shortening 1 c. whole bran cereal lc. sifted flour 2c. milk 24 tsp. baking powder 1/3 c. sugar 4 tsp. salt Pour boiling water over apricots to cover; let stand 10 minutes. Drain well. Mix with 2 tbsp. sugar. Combine bran cereal with milk; let stand until most of moisture is taken up. Add egg and shortening; beat well, sift flour with baking powder, salt and sugar. Stir in apricots. Add to bran mixture, stirring only until combined. Filled greased muffin pans two-thirds full. Bake in hot oven 400 F. for about 25 minutes. Serve immediately.
