ae CAKES ANGEL FOOD CAKE - Mrs. Wilfred Meabry This recipe is especially adapted for use with an electric mix master. Select an 8 or 10 inch tubed cake pan (ungreased) Have ingredients at room temperature and preheat oven to 350 or 375 degrees. Measure into large mixer bowl 1 1/4 cups egg whites 1/4 cup water (room temp.) 1/4 tsp salt 1/4 tsp almond 1/4 tsp vanilla Move bowl control so that beater is close to side of bowl, beat at speed 8 for 5 min. move bowl control back and forth several times to mix well. Measure 1/2 cup sugar Continue beating at speed 8 sprinkle sugar slowly over beaten egg whites, beat for 6 minutes making a total of 11 minutes. While beating the above sift together twice. 1 cup sifted cake flour 2 tsp cream of tartar 3/4 cup sugar Turn to speed 1, sprinkly flour mixture evenly and quickly over egg whites so that flour will be blended in 2 or 3 minutes. Move bowl control back & forth, Bake 375° for 30 min. to 35 min. If you prefer slower oven cook 60 min. at 325°. ANGEL FOOD CAKE - Mrs. L.
