ROMANIAN CHICKEN SOUP WITH Rada Ellison HOME-MADE NOODLES 4-5 ib. fowl 1 large parsnip 1 large onion a few leaves of parsley 3 large carrots 1 T. salt Wash your chicken. Put to boil for 2 to 3 minutes with boiling water. Drain off water. Add boiling water again to cover chicken and put in a large pot and let cook for 3 hours at a slow boil until chicken is done. While boiling clear off foam that forms, then remove chicken and serve as you wish. Strain the soup and put back in pot. Add can of tomatoes, strained or as from can. Add more salt if necessary and pepper to taste. Add your home-made noodles as thick as required and boil for 5 minutes. You can use rice instead of noodles -- and that is chicken and rice. HOME-MADE NOODLES 2 C. flour 4eggs Y2 tsp. salt warm water Use enough warm water to make a firm dough. Knead weil. Roll very thin in a large sheet. Lay dough on tea towel to dry so when the dough is folded it will not stick together. Fold up 2% inches wide and cut real fine with sharp knife. Separate strands and let dry thoroughly. These can be made and put away and used when needed. CHEESE STRUDEL (PLACINTA) Rada Ellison ROMANIAN STYLE Make dough as follows: 3 cups flour - 2 teaspoon salt - 2 tablespoons shortening, 1 cup warm water. Work lard into flour, add 1 cup warm water a little at a time, mixing well until all the flour has been mixed. Knead well on a floured board. Pat Mazola oil on both sides of each pieces of dough then put to rest for 20 minutes. Spread a tablecloth on table and stretch dough very thin, as tissue paper. Sprinkle the stretch dough with % cup Mazola oil, or melted butter and sprinkle mixture (cheese or apple) on dough. Roll and bake in a 400° oven for 35 to 45 minutes - about 10 minutes before done, shoot temperature 25° higher to slightly crispen dough - serve hot. MIXTURE-CHEESE: 1 Ib. cottage cheese sugar (brn) to taste 6 eggs salt to taste about 1% tsp.
