ANGEL FOOD CAKE ll egg whites only l teasp. cream of tartar 1% cups powder sugar (sifted) 1 teasp. vanilla 1 cup flour pinch of salt Sift flour, cream of tartar, sugar and salt to- gether 4 or 5 times. Beat egg whites in a large dish to a stiff froth. Add sifted ingredients a little at a time, beating all the time. Have pan ready. DO NOT let cake batter stand after it has been mixed. Bake 45 minutes and do not open oven door until the cake has been in at least 15 minutes. Then add 2 cups cake flour, 2 teaspoons baking powder and 1 teaspoon desired flavoring. FRIED CAKES 1 cup rich cream l teasp. soda 2 eggs salt 6 cups flour butter milk to make soft dough to roll.
