The texture of this type of bread is somewhat heavier than other types but will stay fresh longer and has a taste all its own. Keep 14 cup of starter in a pint mason jar with the lid screwed on tight in the back of your refrigerator and it will last for years. Starter: 114 cups of warm water 1 pkg granulated yeast 1 cup of flour Mix and keep in an 80 degree temperature for 36 hours or until foamy and slightly sour. To Set Sponge: Put half a cup of starter in a clean jar and store in the refrigerator. ‘(o remainder add 214 cups of warm water and 2 cups of flour. Mix well and let stand in warm place, free from draughts, overnight. To mix batter: When ready to mix batter add the following ingredients: 1 or 2 eggs in centre of sponge 1 tbsp sugar sprinkled over sponge 1 tsp soda in centre of sponge 2 tbsp melted fat, mix well, bake on (dissolve in a little water) a hot griddle turning only once 1 tsp salt sprinkled over sponge Never add remaining batter to starter, which must never contain anything but flour, water and yeast. If eggs are scarce, as they often are in Alaska, use a tablespoon of cooking molasses to batter before baking. To hasten starter for use, a tablespoon of vinegar can be used. I learned to makes these from a real Sourdough—he used a pinch of this and a bit of that—and always “cracked” an egg in the centre of the dough. Sift dry ingredients into large bowl. Mix. Make a well in the center. Into the well add egg yolks, mazola oil and milk. Mix quickly, whip batter until thick and fluffy. If dough becomes too thick add more milk, 4% cup may do. Do not make too thin. Last—fold in beaten egg whites. Bake on not too hot a griddle—always test griddle first. Pancakes Beat 2 eggs well. Add 14 cup sugar, 1 cup sifted flour, and 2 tsp. baking powder. Also add 14 cup melted butter and 14 cup grated cheese. Add milk enough to make a thin batter. Cook and serve with butter and sugar.
