98 Courtesy Nelson Bros. SOLE PIE (Can also be made with filleted halibut or cod) 1% lbs. filleted sole in serving pieces Poach in a shallow pan of milk until nearly done, but still holds its shape. Carefully lift out pieces of fish and put in a large pie plate. Make a medium white sauce using the milk the fish was poached in to thin the sauce. Add to the white sauce — salt, pepper and 1% teaspoon Worcestershire sauce. Pour this sauce over the fish. Slice an Avocado lengthwise in thin slices and place in centre of pie to form a flower shape. Place pie in oven to brown like a meringue. This will take only about 5 to 10 minutes. Bring to the table to serve. It looks very much like lemon meringue pie and is mouth watering NICOMEN ISLAND STURGEON Slice fresh sturgeon in serving pieces. Place in heavy skillet and add a small amount of water. Let simmer slowly for 20 minutes. Drain off the excess liquid and brown in butter. Season with salt, pepper and thinly sliced onion. May be browned in grill, if using electric or gas stove. Serve with a medium white sauce, dotted with chopped parsley. STURGEON STEW WITH DUMPLINGS Skin and clean a 36 to 40 inch sturgeon. Cut whole fish crosswise in 1 inch slices. Place in large stewing pot. Add: 2 medium onions, sliced thin 4 or 5 black pepper seeds 1 teaspoon salt . boiling water to level with top of Y inch cinnamon stick, broken up slices Cover and simmer for 4 hour MAKE DUMPLINGS 2 cups flour Ym tsp. salt 4 tsp baking powder Sifted together and mixed into a soft dough with 1 cup, more or less of milk. Drop from the tip of the spoon onto the stew. Cover closely for 10 minutes. ‘Take up on a hot platter or place around the hot platter, on which the stew is served.
