50 : FRIENDLY CIRCLE—1949 Boiled Dressing YZ teaspoon salt, 1 teaspoon dry mustard, 2 tablespoons flour, 2 tablespoons sugar, 1 egg (or 2 yolks), 34 cup milk, 1 tablespoon butter, 4 cup mild vinegar. Method—Combine the salt, mustard, flour and sugar and mix well. Beat the egg, or the egg yolks and add to the dry ingredients. Then add the milk. Place in the top part of a double boiler and cook cver the boiling water until the mixture thickens, stirring con- stantly. Remove from the heat and add the butter, stirring until this is well blended into it. Cool slightly and gradually add the vinegar. Place in a clean jar, cover and store in a cool place until needed. Salad Dressing lc. sugar, 2 eggs, 1 tsp. mustard, 2 dessert spoons flour, lc. vinegar, 1 c. water, 2 tbsps. butter. Mix well and cook Add butter when removed from stove. —Mrs. Zarn. Fruit Salad l can pineapple cubed, white grapes, bananas, apples and nuts, Dressing: 4c. sugar, 4 c. butter, 2 tbsps. flour, juice of can pineapple, 2 eggs. Put juice on stove, let come to a_ boil, cream butter and sugar, add flour, pour over this the hot juice, place on fire again and let come toa boil slowly until thickened, add well beaten eggs and boil for two min. Cool and thin with whipped cream, then add fruits. This will serve twelve. —Mary Keast, Roblin. Vegetable Salad lc. tomato soup, lc. each celery, apples and carrots, chopped, 1 large spanish onion, chopped, 1 tin pimento, juice 2 lemons, 1% pkts. lemon jelly powder (with water). Mix jelly powder using soup and water to make liquid required. Add other ingredients. Top with grated cheese or salad dressing. 7 Tomato Jelly 1 can tomatoes, 2 tbsps. vinegar, 1 box gelatine, %4 cup sugar, salt and pepper to taste. Take juice of tomatoes, add vinegar, sugar, pepper, salt and then gelatine, which has been soaked in a little tomato juice. Let all come to boiling point. Put to set in small moulds. —Mrs. P. Crawford. 1. Combine shredded cabbage, small bits of crisp bacon and peanuts with your favorite dressing. 2. Shredded cab- bage, quartered marshmallows, pineapple tidbits. Add some pineapple juice to your dressing. 3. Shredded cabbage, apple (leave peel on), raisins. Add a little more mustard to the dressing.
