Cream the cheese with the butter, add the flour, salt and cayenne and blend well. If dough seems dry - add a little cream. Knead the mixture on a pastry board. Shape into roll then refrigerate for at least an hour. Slice the roll thinly and bake the slices on an ungreased baking sheet for 8 to 10 minutes at 350°. Makes 21% dozen. STUFFED EGGS Anna Molnar eggs enough for 1 per person salt and pepper to taste Kraft Miracle Whip either onion powder, curry powder or any other flavoring you wish Hard boil eggs. Cool well. Peel and cut in half lengthwise, put yolks in a separate bowl, add Miracle Whip, salt, pepper and flavoring. Moisten with a bit of cream, mix well, fill egg white cavities with yolk mixture and garnish with a dash of paprika or parsley. Ideal for snacks or parties. BARBADOS PATTIES Beatrice Boynton 1% |b. minced beef % tsp. pepper 1% |b. minced pork 1/8tsp. thyme 2 medium sized potatoes mashed 1 tsp. salt 1 T. butter % C. catsup (more if necessary) 1 onion chopped very fine 1 recipe ‘‘Never Fail’’ or % tsp. parsley (snipped very fine) perfect pastry Preheat oven 375°. Mix ingredients for filling and blend well. Roll pastry - cut in circles with glass water tumbler. Place 1 scant teaspoon of filling on circle - leaving enough room around edge to be able to press edges together. Fold circle in half. Wet edges first, then press edges together, marking with fork. Prick top of patty with a fork. Makes 4 dozen. Baking time is 20-30 minutes on cookie sheet or until golden brown. May be frozen. Reheat in slow oven after thawing. Patties such as these are very popular in all of Latin America. Serve them hot with drinks or make them much larger and serve for lunch or a snack.
