LUSBY % cup butter 34 cup brown sugar 2 eggs 1 tblsp. molasses 1 cup flour 1 tsp. cinnamon % tsp. cloves % tsp. soda l% cup sour milk 1 cup raisins Cream sugar and butter. Add molasses and eggs. Add soda to milk. Sift spices with flour, gradually adding to batter. Lastly add floured raisins. Cook at 375 degrees. Use white icing. RED DEVIL CAKE By MRS. S. AGNEW 1% cup butter 1 tsp. soda 1 cup sugar 14% tsp. baking powder 2 eggs 14 tsp. salt 114% cups flour % cup boiling water 1 tsp. vanilla 14 cup thick sour milk 2 squares bitter chocolate Pour boiling water on chocolate. Mix quickly and add soda. Cool. Cream butter and add sugar gradually and beat till fluffy. Add well beaten eggs and beat mixture till creamy. Sift flour, baking powder and salt together three times and add alternately to previous ingredients alternately with sour milk. Add chocolate mixture to batter and mix well. Put in buttered pan 12x8. Bake about 30 minutes at 375 degrees. SPICE CAKE By MRS. S. LEWCHUK, Vancouver 5 tbsp. shortening 14 tsp. soda 1 cup brown sugar 14 tsp. cinnamon 1 egg 4 tsp. cloves 14% cups flour 2, cup milk 4 tsp. salt 1% tsp. vanilla 4 tsp. baking powder Bake in moderate oven (350°) for 45 to 50 minutes. This cake has a nice crisp crust. SPONGE CAKE By MARGARET R. FOURNIER 1 cup cake flour, sifted 14 cup fine granulated sugar 14 tsp. baking powder 2 tbsp. strained lemon juice 5 eggs, separated or same amount of cold water 14 tsp. cream of tartar and flavouring 4 tsp. salt Sift, then measure cake flour, add baking powder, sift twice more, then set aside. Beat egg whites till frothy, but not dry, then add cream of tartar and salt, and beat until mixture stands in peaks. Gradually add % cup fine granulated sugar, beating constantly. Beat yolks and lemon juice or alternate, until thick and lemon colored. Add % cup sugar and beat. Fold flour mixture into yolk mixture. Lightly combine with egg white mixture. Turn into two medium tube pans (or one large tube pan). Bake at 350 degrees for 50 to 60 minutes (or 325 degrees if in large pan).
