136 British Columbia Women’s Institutes AFFINITY PIE 34 cup sugar 2 egg yolks, beaten 2 tbsp flour 2 cups scalded milk 2 tbsp cornstarch ! grated rind (14 lemon) 34 tsp salt a 2 bananas, sliced Mix sugar, flour, cornstarch and salt thoroughly. Add egg yolks and milk. Cook and stir over low heat (or in double boiler) until very thick and _ smooth. Add lemon rind. Remove from heat. Chill. Use baked pastry shell. Cover bottom with sliced bananas. Pour in cream filling. Cover top with lemon meringue: beat 2 egg whites stiff. Add 4 tbsp. sugar and 14 tsp. lemon juice. Place pie in slow oven (325 deg.) Bake until meringue is golden brown. bd PLAIN CUSTARD PIE You start out with a neatly crimped, 9-inch pie shell, unbaked. Be sure there are no bubbles under the pastry and no holes in the pastr,. Let the pie shell chill while you’re making the filling. Filling: Blend 4 eggs (or 2 eggs and 4 yolks), slightly beaten, 1% cup sugar, 14 tsp. salt, Yo tsp. vanilla, and 14 tsp. almond extract. Gradually stir in 2% cups scalded milk. ‘To avoid any spills, add the last cup of filling just before you close the oven door. Your oven has been set at 400 deg. Pie will take 25 to 30 minutes to bake. When you test it, insert knife halfway between outside and center of custard. If pie is done, knife comes out clean. Sprinkle pie with nutmeg. Set on cooling rack 15 to 30 minutes. ‘Then chill in refrigerator. This is custard pie plain and perfect. Don't cut custard pie until you are ready to eat it. MINCEMEAT 114 lbs. currants 2 Ibs. beef suet 11% |b. dark sultanas 2 lbs. brown sugar 2 lbs. raisins : 14 cup molasses 5 Ibs. apples Y% cup brandy 1 tbsp cinnamon 3 2 tsp allspice 2 tsp cloves 34 tsp salt 2 oranges and 2 lemons, juice and rind > Mix all ingredients, except brandy, in a large bowl, let stand overnight; in the morning stir well, put into jars and pour brandy over the top of each to act as a seal. Cover and keep in a cool place. CHEESE PUFFS 8-0z. pkg. deep yellow, loaf type cheese. Soften at room temperature, cream and add 4 tbsp. shortening, cream well together. Measure and sift together twice 114 cups once sifted pastry flour, 14 tsp. salt, 4% tsp. celery salt. Grad- ually mix dry ingredients into creamed mixture. Chill for 2 hours, roll into balls (1 inch dia.), bake until golden brown, 450 deg. for 15 minutes. Serve hot with cocktail juices or salads.
