BASIO ICE CREAM Ann Cope, St. George, Ont. 1 egg, % cup white sugar, 1 teaspoon vanilla, 1 cup whipping cream. Add sugar and vanilla to egg yolk and beat well. Beat egg white until stiff, add 1 tablespoon sugar, mix well, add to yolk mixture. Beat whipping cream until stiff. Mix all together and place in freezing compartment of re- frigerator. Stir after % hour, then leave for 3-4 hours, woe VANILLA WAFER DESSERT Kay Delarue, Toronto, Ont. 14 pound vanilla wafers, %4 cup but- ter, % cup fruit sugar, 1 egg, 1 cup crushed drained pineapple, 4-'% pint whipping cream. Crush vanilla wafers and spread % of these on bottom of pan. Cream but- ter and sugar, add egg, cream together well. Spread over wafers. Put layer of crushed pineapple on next. Add layer of whipping cream. Lastly add rest of crushed wafers. Chill overnight if pos- sible. Serve cold. y ff WINTER PUDDING Margaret Toews, Saskatoon, Sask. 1 tablespoon gelatin, 2 tablespoons cold water, % cup sugar, 1 cup milk, 1 cup whipping cream, 1 teaspoon vanilla, pinch of salt. Soften gelatin in cold water. Add sugar and salt and dissolve in hot milk. Add vanilla and let stand in refrigera- tor till partly thickened. Mix with whipped cream and put in bowl in re- frigerator to set. Green and red cherries or other fruit may be added. Can be made a day or two in advance. Serve with hot chocolate sauce. w RASPBERRY TORTE Ruth Parsley, Tulsa, Okla. 1 package frozen raspberries, 2 tea- spoons gelatin, % cup water, 1 cup whipping cream, raspberry syrup and water to make 1 cup. Thaw berries, drain well (saving syrup). Soften gelatin in water. Heat the syrup and water mixture, add gela- tin mixture and thoroughly mix. Chill until partly set. Beat until fluffy. Fold this mixture into whipped cream, fold in berries. Chill until partly set. Take one 10x5 loaf angel cake, and cut in 3 layers horizontally. Spread raspberry mixture between layers, on top and sides. Chill until set. Serves 8 to 10. Very nice and colorful for parties. 25 SHERRY PUDDING NOEL Margaret Craig, Red Deer, Alta. fe 1 tablespoon gelatin, % cup cold milk, 1% cups: table cream, %4 orange rind, 3 eggs, separated, 4% cup white sugar, 1% cup sherry, pinch salt, 4 cup sugar, lady fingers, maraschino cherries. Soften gelatin in milk. Put cream and orange rind into a double boiler, scald and remove rind. Beat the egg yolks slightly and stir in 4% cup sugar, stir in part of the heated cream, then add this mixture to remaining cream in double boiler, cook, stirring until it coats a spoon. Remove from fire and add gelatin, blend in the sherry and chill until just beginning to set, stirring occasionally. Beat egg whites with salt until stiff and beat in gradually %4 cup | sugar. Beat the gelatin mixture until foamy and add the meringue, beat thoroughly to combine. Arrange a few split lady fingers in a bowl, add half the pudding, more lady fingers and re- maining pudding. Decorate with poin- settias made from maraschino cherries. Chill thoroughly. wom GRAPE CHARLOTTE Ruth Davy, Rivers, Man. 2 cups grape juice, 1 package lemon jello powder, pinch of salt, 1 cup heavy cream. Scald grape juice and add_ jello powder, stirring until dissolved. Add salt. Chill with occasional stirring until thickened. Whip until frothy and light. Whip cream and fold in. Chill in glasses. Garnish with more whipped cream. b=: a * _ MAPLE DESSERT May Russell, Arnprior, Ont. 1 cup maple syrup, 1 cup milk, 2 eggs, separated, 1 envelope gelatin, 1 pint whipping cream. Heat milk and syrup, add beaten egg yolks. Cook for a few minutes and take from fire and add gelatin which has been dissolved in a little milk. Add beaten egg whites, when cool add stiffly whipped cream. Put in mold to stiffen. Garnish with cream and walnuts. ee COFFEE MALLOW Ruth Davy, Rivers, Man. 16 marshmallows, % cup strong, hot coffee, 1 cup heavy cream, 1 teaspoon vanilla. Cut marshmallows and add to coffee in double boiler. Stir until melted, cool and when beginning to set fold in stiffly whipped cream and vanilla. Chill in parfait glasses with or without lady fingers. Garnish with whipped cream.
