Combine and add 1 beaten egg 1, cup milk 14, cup syrup from crushed pineapple 3 tablespoons vegetable oil or melted shortening Stir until well combined. Spread half of batter in a greased 8” square cake pan. Sprinkle with one-half the crumb mixture and then spread with the drained crushed pine- apple (about 34 cup). Spread remaining batter over the pineapple. Top with other half of the crumb mixture. Bake in preheated 400° oven for 25 to 30 minutes. Serve warm. Coffee Cakes freeze very successfully. Cover with date filling made by combining 14 cup lightly-packed brown sugar 1 tablespoon Pre-Sifted PURITY All-Purpose Flour 14, cup chopped walnuts 14 cup chopped dates 14, cup melted butter or margarine Spread remaining batter evenly over the top. Sprinkle with 14 cup chopped walnuts Bake in preheated 425° oven for 25 to 30 minutes. Serve warm. 72 Sally Lunn Preheat oven to 400°. Cream together 14 cup shortening 14 cup sugar Add 1 teaspoon lemon juice 2 unbeaten eggs Beat until light and fluffy. Blend or sift together 114 cups Pre-Sifted PURITY All-Purpose Flour 214 teaspoons baking powder 34 teaspoon salt Add to creamed mixture, alternately with 34 cup milk Mix well after each addition. Pour batter into a greased 9” round cake pan which is at least 114” deep. Sprinkle with a mixture of 14, cup sugar 14 teaspoon nutmeg 1 tablespoon grated lemon rind 1 tablespoon melted butter or margarine Bake in preheated 400° oven for 25 to 30 minutes.
