54 British Columbia Women’s Institutes RULLE PYLSE OR ROLLED PICKLED MEAT 3 Ibs. flank (beef) 10 whole allspice 1 or 2 pork tenderloins 6 cloves 1 Ib. veal 1 onion 2 bay leaves Make a mild brine of salt and water. Soak meat in brine for several days, then wipe dry. Lay flank flat on table, lay pork and veal so it will be in centre when rolled. Tie or sew securely with string. Boil for 3 hours with spices and onion. Do not use too much water. When meat roll is cooked put it into a long bread pan or casserole and pour water in which it was boiled over it let it set over night. It should all be jellied and can be turned onto a platter for slicing. ‘This is a real old Scandinavian dish usually made for Christmas. CABBAGE ROLLS 12 large cabbage leaves 2 tbsp brown sugar 1 lb. ground raw beef 1 can condensed tomato soup 1 cup cooked rice 4 cup water 1 tsp minced parsley 1 bay leaf 1 egg 4 whole cloves Y% cup milk 4 cup finely chopped onion 1 tsp salt Carefully remove outer leaves of a large head of cabbage. Pour boiling water over them, let stand until wilted, drain well. If centre stalks are large pare down with sharp knife. Combine ground beef, rice, parsley, egg, milk, half the onion, salt and pepper. Place a heaping tablespoonful of mixture in centre of each cabbage leaf, wrap tightly envelope fashion, securing overlap with tooth- picks. Place rolls in greased baking dish, sprinkle with sugar, cover with soup, water, remaining onion, bay leaf and cloves. Bake in moderate oven 350 deg. for about 14 hours adding more water if necessary to keep rolls nearly covered with sauce. Makes 6 servings. CORN BREAD AND MEAT BALL RING Meat Balls 114 lbs. ground beef 4 tsp pepper 2 tsp salt Y% cup tomato juice (drained from can 34 cup rolled oats (uncooked) tomatoes) Y cup chopped onion Sauce 2 cups canned tomatoes 1 six-oz. tomato paste 4 cup chopped green peppers For meat balls, combine ground beef, onion, salt, pepper, oats and tomato juice. Shape into small balls, brown in a little shortening. Add tomatoes, tomato paste and green peppers. Cover, cook over low heat about 30 min. Corn Bread Ring Prepare batter according to favourite recipe. Pour into well-greased ring mold. Bake in a slow oven 20 minutes, invert and fill with meat balls and sauce.
