For filling, cream sugar and butter and add egg yolks, well beaten and flour. Add boiling water and cook, stirring constantly until thick. Add vanilla. Set cream aside until cool. Slice a layer of bananas into pie shell, cover with a layer of cream, then a layer of sliced bananas and then of cream, until all is used. Put in oven to bake. Cover with beaten egg whites and brown. Banana Pie 2 ripe bananas 1 ec. sugar Flavoring i t. salt 2 eggs, unbeaten Mash bananas and add sugar and unbeaten eggs, salt and flavoring. Beat until stiff. Fill baked pie crust and bake 20 minutes. Serve covered with whipped cream, dots of jelly and sprinkled with nuts. Cocoanut Caramel Pie 34 c. sugar 5 T. flour 2 baked pie shells 2 c. milk 3 egg yolks Y%, t. salt 1 T. butter '’, t. vanilla , c. sugar YY, e. cocoanut Y, ¢, cream Combine sugar, flour and salt in top of double boiler; add milk and egg yolks, slightly beaten, and mix thoroughly. Place over rapidly boiling water and cook 10 minutes, stirring con- stantly. Remove from fire, but allow to remain over hot water. Caramelize sugar by placing 1-3 c. sugar in iron skillet over medium flame and stir constantly until melted and straw color. Add at once to thickened mixture, stirring until blended. Add butter and vanilla. Cool. Turn into 9 in. baked pie shell; garnish with a ring of whipped cream and sprinkle with cocoanut. Pineapple Cheese Pie 2 c. fresh pineapple 34 c. sugar 3 T. flour Y, t. salt 1 egg 4 T. butter Line pie pan carefully with pastry and press edge flat. Peel and remove eyes from pineapple, shred or put through food chop- per. Measure 2 c. of pulp and juice. Mix flour and sugar together and blend with pineapple. Add beaten egg, salt and butter. Pour into unbaked pie shell. Cut narrow strips of the remaining pastry and arrange lattice fashion over top of pie. Bake in hot, 425 deg. oven about 10 minutes, reduce heat and continue baking 30 htes longer. 128
