Grate 1 cup bulk cheese. In greased casserole place a layer of sausage meat, a layer of bread cubes, then a layer of cheese. Repeat. Cover with 2 cups milk, 2 eggs (slightly beaten), 1 tsp. dry mustard, salt and pepper to taste. Bake in moderate oven until firm. —Kathleen Trann, Porcupine Plain. VEAL SCALLOPINE 1% Ibs. veal cutlet (cut ee 4 cup flour 1 tsp. salt Y% cup pepper Y% cup butter 1 med. onion (chopped) 2 tbsps. chopped green pep- per 1 can condensed tomato soup % cup water % cup grated cheese Roll veal slices in flour, salt and pepper. Heat butter in large skillet. Fry onion and green pep- per until tender then remove and add veal, and brown on both sides. Add soup mixed with water. Again add the onion and green pepper. CASSEROLE OF RICE AND MEAT 1 lb. ground steak or ham- burger % cup uncooked rice 2 tsps. minced onion % tsp. salt 2 cups tomatoes or tomato soup Mix rice, meat and seasonings together. Form into small balls. Place in deep frying dish and cover with the seasoned tomato. PEROHY (Ukrainian) 1 egg 1 tsp. salt 1 cup water Flour 3%4 cup cottage cheese 1 medium apple 1 egg Beat egg with salt, add water and flour to make a fairly stiff dough. Roll out as a pie crust and cut in 3-inch squares. In the centre of each put a spoon- ful of cottage cheese mixed with the grated apple and egg. 17 Fold over and press the edges tightly. Put in a kettle of boil- ing water and cook 10 minutes. Stir frequently. Lift out; pour melted butter over them. (Other substitutes are: hot mashed po- tatoes with cottage cheese, well seasoned with butter, salt and pepper; or boiled sauerkraut, strained and seasoned with a bit of fried onion, salt and pepper. —Mrs. K.
