THE HOSPITAL COOK BOOK 35 JELLIED CABBAGE SALAD One package of lemon jelly soaked in 2 cups of boiling water and a little vinegar, pepper and salt. Three tablespoons of sugar, 1 large cup chopped cabbage, 1 cup chopped celery, 1 cup pimentos. Turn on lettuce leaf and serve with dressing. .Nice for individual moulds. L. M. DOWLING UKULELE SALAD Garnish the required number of plates with fresh, crisp lettuce leaves. Place a slice of Hawaiian pineapple in the center of each plate. Put enough fresh cream cheese on top of the pineapple to cover the fruit to within an inch of the edge (about two or three tablespoonsful), sprinkle with ground nuts and place a Maraschino | cherry on top of the cheese. Pour a little of the pineapple juice over the combination and serve. ELEANOR M. KIDD _ REGINA SALAD % cake of cream cheese (15c size), 1 cup salad dressing, 1 cup whipped cream, 1 cup pineapple (cut fine), 1 cup chopped dates or white cherries chopped. Method—Mix the cheese and salad dressing together, add the fruit, then fold in the whipped cream. Set on ice for two hours. Serve on lettuce. BAKED APPLE SALAD Six cooking apples, 3 teaspoons butter, 6 tablespoons sugar, % cup chopped nuts and raisins, dressing and lettuce, Method—Core and prick apples, fill with butter and sugar. Bake with a little water until tender. Chill, stuff centres with nuts and raisins, place on lettuce leaf and serve with salad dressing. BANANA CANDLE SALAD Six slices pineapple, 3 bananas, % cup nuts, 6 cherries, salad dressing and lettuce. * Method—Place ring of pineapple on lettuce leaf, cut bananas in half, dip in salad dressing, roll in chopped nuts, place on pineapple with cherry on top. x HELEN B. MORRISON 4 MOULDED SPINACH Two pounds of spinach, 1 hard cooked egg, salad dressing. Method—Cook spinach, drain, chop and press into individual moulds. Turn onto lettuce leaf, garnish with egg and salad dressing. BUTTERFLY SALAD Six slices canned pineapple, 1% cup cream cheese, 6 pecans, 1 pimento, celery teninls. — Method—Half pineapple, place curved edges together on lettuce leaf for wings. Form body of cream cheese, pecan for head, celery for antenna, garnish with pimento and salad dressing. HELEN B. MORRISON
