110 THE BLUE BIRD CooK BooK CREAM FILLINGS 2 cups milk (scalded) Y2 cup sugar 2 egg yolks (beaten) 3 tablespoons cornstarch Y2 teaspoon salt Mix sugar, salt and cornstarch together; add cold milk and blend. Add scalding milk gradually and cook in top of double boiler 15 minutes stirring constantly until mixture thickens. Pour a small amount of the hot mixture over egg yolks, stirring rapidly. Return to double boiler and cook 3 minutes longer. Add vanilla and cool. BUTTERSCOTCH PIE 2 cups milk 2 eggs beaten 1 cup brown sugar 1 teaspoon vanilla 4 tablespoons butter Salt 4 tablespoons flour Melt 2 tablespoons butter in double boiler, add flour, blend; add milk and stir until thickened. Melt 2 tablespoons butter in sauce pan, add sugar and stir until it forms a syrup, not too dark, add this to first mixture, add eggs and flavoring. Cook 3 minutes, pour in baked crust. When cold serve with whipped cream. Cool and put through meat grinder. Beef can be eliminated if you wish just the fruit mix. Grind apples and peel. Cut raisins in half. One cup of brandy may be used, using 3 cups fruit juice, pineapple or any flavor desired. This can be baked in pie, 400 for 10 minutes and 350 for 40 minutes. To preserve, bring to boiling point for 5 minutes and seal in jars. PUMPKIN PIE 1% cups pumpkin 1 teaspoon cinnamon 1 cup white sugar Yq teaspoon salt 2% cups milk VY cup molasses if desired Ya teaspoon vanilla Nutmeg or cloves if desired 1 teaspoon ginger Mix well together and bake in uncooked shell. Bake 10 minutes at 450 degrees and 30 minutes at 325 degrees. Serve with whipped cream.
