aeons LOW CALORIE CHEESECAKE. Mrs. W. Murray 1/3 c. graham cracker crumbs 3/4 c. granulated sugar 1/4 tsp. nutmeg (substitute) 1/4 tsp. cinnamon 1 tsp. grated orange rind 24 oz. cream cottage cheese 1 Tbsp. lemon juice 2 envelopes (1 Tbsp. each) 2tsp. vanilla -unflavored gelatin 1/2 tsp. almond extract 1c. skim milk 4 egg whites 3 4 egg yolks, beaten 1/2 tsp. cream of tartar 1/4 tsp. salt 1. Combine cracker crumbs and spices. Mix well. Press onto bottom of 8-inch spring pan. Set aside. 2, Sieve or blend cheese in blender until smooth. Set aside. 3. Sprinkle gelatin over milk in top part of double boiler. Add egg yolks. Stir until blended. Place over hot water and cook, stirring constantly, until gelatin dissolves and mixture thickens slightly, about 5 minutes. Remove from heat. Add next six ingredients, mix well. Add cheese and mix until blended and smooth, Chill until mixture mounds slightly when dropped from spoon. 4. Combine egg whites and cream of tartar, beat until stiff; fold into cheese mixture. Spoon into crumb lined pan. Chill until firm. I usually add a sprinkle of cracker crumbs over the top before chilling. -31- Gibsons, B. C.
