Soak in warm water for 1% hour 34 cup dried apricots Combine 14, cup orange juice 14 cup boiling water Cool to lukewarm. Grind Soaked, drained apricots Peel from 14 orange 14 cup raisins Blend or sift together 134 cups Pre-Sifted PURITY All-Purpose Flour 34, cup sugar 114 teaspoons baking powder 14 teaspoon baking soda 14 teaspoon salt Add Ground fruit Combine to coat the fruit. Make a well in the centre. Add 1 beaten egg Orange juice and water mixture 2 tablespoons vegetable oil or melted shortening Mix only: until combined. Pour into a greased 9” x 5” loaf pan. Let stand for 20 minutes. Bake in preheated 350° oven for 50 to 60 minutes. Many tea bread loaves will slice more easily the second day, and the flavour often improves as well. Add dry ingredients alternately with 1 cup well-mashed banana Beat until combined after each addition. Pour into a greased 9” x 5” loaf pan. Let stand for 20 minutes. Bake in preheated 350° oven for 50 to 55 minutes. VARIATION: (a) Banana Nut Bread Add % cup chopped walnuts to the dry ingredients in the above recipe. Tea breads freeze well. VARIATIONS: (a) Apple Corn Bread Prepare Corn Bread batter as directed above; cover with a layer of peeled apple slices; sprinkle with a mixture of 2 tablespoons sugar 1 teaspoon cinnamon Bake as directed.
