VEAL AND HAM PIE 314 Ibs. shoulder veal 1 cup celery chopped 14 cup carrots diced 2 teaspoons parsley chopped 1 teaspoon salt lg teaspoon pepper lg teaspoon mace 2 tablespoons gelatine 4 cup cold water 14 Ib. cooked ham, cut in strips 2 hard boiled eggs Plain pastry Place veal in kettle. Cover with cold water. Simmer gently until meat is tender. ‘Take meat off the bones and dice. Strain stock—there should be about 3 cups. Add to diced vegetables and sea- sonings, cook until vegetables are tender. Soak gelatine in cold water for 5 min- utes. Add to hot vegetable stock, stir un- til dissolved. Fill greased casserole with alternate layers of veal, ham and slices of hard boiled egg. Pour the vegetable stock over all. Cover with plain pastry, bake in hot oven (450° F.) until pastry is brown. Pour off any excess grease, heat the tomatoes and pour over sausage and onions in a baking dish. Then cover tomatoes with the following batter: 14 cup sifted flour 2 teaspoons baking powder l-egg Pinch salt, 3 Sift dry ingredients into dish, add beaten egg and milk to make a stiff dough. Economy Pure Pork Sausage Brown the pork sausage, drain off all but 2 tablespoons of the fat. Mix eggs and milk; add the mixture to flour and salt and beat well with a rotary egg beater until it’s smooth. Pour over sausages, ~.and bake in hot oven (400° F.) for about 30 minutes. Serve immediately. SAUSAGES IN BATTER Make a batter of egg, seasoned flour and milk, coat Economy Pure Pork Sausages in the mixture, and fry them in deep fat. PIGS IN MASHED POTATOES Bake potatoes, split them and scoop out the middles. Mash the potatoes and re- place them in the shells. Then add cooked Economy Pure Pork Sausages. Re- turn them to the oven and brown lightly. CORN & SAUSAGE CASSEROL Brown 1 lb. of Economy Pure Pork Sausages, drain off fat. Add 1 can of creamed corn; top with fluffy mashed potatoes and brown in the oven, about 10 minutes at 375° F.
