RHUBARB CUSTARD PIE

1 co. rhubarb, cut in l-inch picces 1 tbsp. melted butter
1 tbsp. flour 1 ce. sugar

2 eggs separated , + tsp. ginger

+ tsp, nutmeg 1c. milk

= tsp. cinnamon Pastry

Mix rhubarb with sugar and flour. Beat egg yolks; add milk, scasonings and
melted butter. Line 2 pic plate with pastry and put in the rhubarb mixture.
Pour egg mixture over it and bake in moderate oven until firm. Then make a
meringue of the egg whites and 6 level tablespoonfuls of powdered suger beating
until mixture stands in peaks. Arrange on top of pic and brown in moderate
oven. This makes 1 small pic - about 6 servings.

Believe it or not, this is 2 wonderfully tasty apple pic.
Filling: .

6 c. water 3c. sugar
6 tsp. cream of tartar

Bring above to boil and add 50 plain Ritz crackers and boil for 2 minutes.
Cool before putting into pic shell.
