dissolve gelatine. Combine with. ...1 cup mayonnaise

or cooked salad dressing

or sliced stuffed olives and gherkins

Arrange strips or shapes cut from pimiento, or olive and gherkin slices,
in bottom of wet mould (or individual moulds). Pour in a very little jelly
mixture. Allow to set and chill. Arrange alternate slices of ham and
chicken, with jelly mixture to fill the mould. Chill until firm. To serve,
unmould on crisp lettuce or cress, garnish with olives, sweet pickle, small
stuffed tomatoes or tomato sections, etc.

COLD CHICKEN OR TUNA MOUSSE—No. 24

or 1 cup milk (for tuna)

Few grains paprika
Cook in double boiler, stirring con-
stantly until thickened.

soaked in. 0% es ee 4 tablespoons (extra) cold stock or milk

Add gelatine to hot custard, stir until
dissolved, then allow to stand until
thick as honey.

and combine with the mixture.

Choose for flavour and add.......... 3 tablespoons chopped pimiento and

green pepper, mixed
or 2 tablespoons chopped pickle

Turn the mixture into wet mould or individual moulds, put in cold
place, set and chill; unmould on lettuce or cress; garnish, using perhaps a
spoonful of chopped beet salad.

Sliced cucumber or cucumber jelly is delicious with tuna, and a tart
red jelly with chicken mould.

N.B.—Delicious if frozen in tray of automatic refrigerator—in which
case use only 1 tablespoon gelatine. 7
