Nise 94 British Columbia Women’s Institutes TUNA SCALLOP Make sauce of:— 4 tbsps butter 34 tsp sugar 2 cups milk 1% tsp pepper or VY tsp salt 5 tbsp flour Stir in:— 2 beaten eggs Y% minced onion 1 tbsp lemon juice 1 can tuna 1 tbsp parsley Place in buttered baking dish and top with buttered crumbs. Bake in oven at 350 deg. for 35 to 45 minutes. TUNA CHICKEN 34 cup sliced mushrooms or chopped 2 eggs, beaten oysters 2 tbsp flour 2 tbsp butter Y% cup soft breadcrumbs 1 cup milk 2 tbsp chopped parsley 1 7-oz. can tuna, flaked ¥Yg tsp pepper 1 tsp salt Saute mushrooms in butter, blend in flour. Add milk and cook until thickened, stirring constantly, then add crumbs, parsley, seasonings and eggs. Pour into shallow greased dish. Place tuna in centre like a chicken. Place pan in water and bake in oven 40 minutes at 350 deg. F. Serves six. CURRIED LOBSTER 2 cups cooked lobster, diced 2 tsp curry powder 2 cups weak soup stock V4 tsp salt 1 tsp minced onion Fry the onion in the butter, add the salt, the stock and the curry. Cook gently for five minutes, before putting in the lobster. Serve as soon as ~ this is thoroughly heated. Serve plain boiled rice with this dish. CREAMED CRAB | | 3 tbsp butter melted add—l4 tsp salt | stir in until blended— 3 drops Tabasco : 2 tbsp flour 1 642-0z. can crab meat stir in gradually 2 cups milk Cook until the sauce is boiling then reduce the heat. Beat and add 2 eges. Cook and stir gently for 2 minutes, but do not permit the sauce to boil. Serve on buttered toast. A shake of paprika may be added. LUTFISK 3 Ibs. dried cod sawed in 6 inch lengths. Soak in 5 gallons of water with 1 tablespoon lye added. Soak for 3 days. Then soak for 5 more days in cold water. Change water every day. Keep cool. Use an enamel or earthenware crock. It should make the crock full. Boil for 1% hour and serve with melted butter and steamed potatoes.
