Split Pea Soup Soak 2 cups of split peas over- night in 2 quarts of cold water. In the morning add an onion, sliced. Cover and cook slowly for 1% hours or until the peas are soft, then mash. Mix thoroughly 2 tablespoons of flour with % cup of dry skim milk and stir in 2 cups of cold water. Stir into the hot peas with 2 tablespoons of fat and salt and pepper to taste. Cook the soup a few minutes longer. Veal and Pork Pie YZ pound veal shoulder or rump Y% pound left-over pork 2 tablespoons fat cups boiling water 1% teaspoon salt Few grains pepper bay leaf Flour cup cooked carrots cup cooked potatoes cup cooked onions 1 1 Cut veal and pork in 2-inch cubes; brown in fat. Add boiling water, salt, pepper and bay leaf and cover. Simmer 1 hour or until meat is tender. Remove bay leaf. Mix a little flour to a smooth paste with cold water and blend into meat mixture. Cook, stirring constantly, until thick. Add carrots, potatoes and onions. Pour into shallow baking dish. Roll out pastry % inch thick on a lightly floured board and cut in strips % inch wide. Place on baking dish in open woven pat- tern. Trim edges. Press with tines of fork. Bake in a very hot oven, 450 deg. F. for 15 minutes. Serves 4. Note: For company, make po- tato balls and carrot balls and use small whole onions. 19 Jellied Tomato Aspic 1 bay leaf Tabasco sauce 2 onion slices 1% teaspoon salt 134 cups tomato juice 1 envelope gelatine % cup cold water 1 tablespoon vinegar Lettuce Add bay leaf, a few drops tabasco, onion and salt to strained tomato juice, and simmer for 10 minutes. Soften gelatine in cold water and dissolve in hot tomato mixture. Add vinegar and strain. Pour into mold which has been rinsed in cold water. Chill until firm. Unmold on lettuce leaf. Vegetable Soup 1 quart milk made of 1 cup dry skim milk and 1 quart water tablespoons fat tablespoon flour cups grated raw vegetables (potatoes, turnips or carrots) 1 tablespoon finely chopped onion 134 teaspoons salt 1% teaspoon celery salt Melt the fat, mix well with the flour, and add the milk, stirring constantly until the mixture comes to the boil. Then add the vegetables and cook 10 minutes. Add seasonings and serve. 3 1 2
