COOK BOOK 49 Salad Dressings and Salads “Variety is the Spice of Life” Uncooked Salad Dressing 2 eggs beaten, 1 tsp. salt, 1 tsp. mustard, 1 tin Borden’s condensed milk, 1 cup vinegar. Beat the eggs, salt, mustard and milk vigorously for a few minutes, add vinegar, stir well and set aside for a few hours to thicken. —Mrs. Fitzgerald. Sour Cream Dressing, Uncooked lc. heavy sour cream, 1 tbsp. vinegar, 2 tbsps. lemon juice, 3 tbsps. sugar, 4 tsp. salt, 1 tsp. mustard, paprika. Beat cream until thick, fold in remaining ingredients mixed to- gether and mix well. Use on cold slaw, lettuce or any spring vegetable salad, especially cucumber. For potato salad omit part of the sugar, add pepper and two chopped hard _ boiled eggs. —Mrs. Fitzgerald. Old-Fashioned Salad Dressing %4 c. sugar, % tsp. salt, 4 c. flour, % c. vinegar, 1 tsp. mustard, 1 6 oz. can evaporated milk, 3 slightly beaten egg yolks, % cup water. Mix sugar, salt and flour, add eggs, water, vinegar and mustard. Cook in double boiler till thick. Chill, then add chilled milk. Beat until light and fluffy. —M. Coleman. Mayonnaise 1 egg (or 2 yolks), 2 cups salad oil, % teaspoon dry mus- tard, % teaspoon:salt, dash of cayenne, 1 tablespoon sugar, 3 tablespoons vinegar, 1 tablespoon lemon juice. Method—Beat the egg or the egg yolks until very light. Beat in gradually % cup of the salad oil. Mix the sugar and seasonings and sprinkle these over the mixture. Beat in well, then gradually beat in the remaining oil, alternating with the vinegar and ~ lemon juice, as the mixture thickens. French Dressing 14 teaspoon salt, dash of pepper, 44 teaspoon paprika, 1 teaspoon sugar, 214 tablespoons vinegar, % cup salad oil. Method—This may be made by combining the dry in- gredients in a bowl and then adding the vinegar and the oil and beating thoroughly with a rotary beater. Or it may be made by placing all ingredients together in a bottle with a stopper or in a small jar with a screw top and shaking well together. Store in a cool place, and, before using, either beat or shake well again.
